Moray:

The most photographed circular agricultural terraces may be seen in Moray. They have the appearance of a Roman amphitheatre. Moray’s farming terraces are a monument to the Incas’ progress in farming practices.

To the Incas, this was more of an agricultural research facility. Because the terraces have varied temperatures at different levels, the Incas were able to discern the optimal weather conditions for growing food. This is why the country today produces over 800 different potato cultivars.

Maras’ Salt Mines:

Maras’ salt mines have been in operation since pre-Inca times. It is passed down through the generations. The Salt Flats are privately owned by members of the community. They continue to harvest salt using the traditional Solar evaporation process, as they have done for centuries.

Maras salt is distinguished by its pinkish color and unusual flavor.
